Make coconut rice (rice with coconut milk instead of water). While that cooks, put a spoonful of Panang curry paste, a bit of oil, and a bunch of coconut milk in a pan. Let simmer until the coconut milk absorbs the flavor. If you have, add Kaffir lime leaves once you have a sauce. After the sauce is finished, cut up fish and lemongrass and add to pot for 5 minutes. Once finished, remove the curry from the pot, stir-fry your vegetables, and serve (rice + curry + veggies).
