Mexico Missions Trip Itinerary (08/06/2004 ~ 08/15/2004)

 

Cornerstone Team Members:

Day 1 Friday, August 6th

  • YYZ (Toronto) -> IAH (Houston) -> SAN (San Diego)

 

Day 2 Saturday, August 7th

  • Breakfast at Stella's on Third in Chula Vista.  Great breakfast food & Mexican hot chocolate.

  • Drove Along HW1 in Mexico.

Day 3 Sunday, August 8th

  • Went to church in the morning, how I wished I knew more Spanish.

Day 4 Monday, August 9th

  • Kitchen duty, need I say more?

  • If I remember correctly, the menu was spaghetti for lunch.

Day 5Tuesday, August 10th

  • Volunteered for kitchen duty.  ¿Estás loca?

  • I don't exactly remember the menu anymore, was there some deep-fried stuff like bacon and curly fries?

Day 6 - Wednesday, August 11th

  • Construction day.

  • Helped to put in the concrete floor for the Espinosa family.

  • Muchachas: shoveled gravel + sand to be added to the mixer.

  • Muchachos: added cement and aqua to the mixer and poured concrete.

  • Also donated clothes and diapers to a family who lived in a shack right next door.

  • After a day of hard labour, it was much appreciated that Estella, the cook for the orphanage, offered to cook us dinner.

  • We had chicken mole and tacos that were simply amazing.

Day 7 - Thursday, August 12th

  • Found out at breakfast that all the chicken we bought had gone bad.  Someone had turned our fridge off...

  • What a crappy day to be on kitchen duty.

  • Scrambled to put lunch on the table.  Thank goodness for leftover spaghetti from a coupe of days ago.

  • The hockey tournament concluded in the afternoon.

  • Dinner menu: improvised huevo + salsa + cheese quesadilla.  Actually turned out pretty good.

  • We drove to Ensenada for our own dinners.  Great fish and shrimp tacos.  Also tried the shrimp + octopus cocktail that Enid ordered.

  • Yummy churros too.

Day 8 - Friday, August 13th

  • Not on kitchen duty.

  • Drove into town to get more groceries and soy sauce for the chicken fried rice that we made for lunch.

  • Bought mole sauce & salsa verde from the supermarket to try in Canada.

  • The award ceremony for the hockey tournament took place in the early afternoon.

  • Took the kids to a swimming pool situated in the middle of nowhere.  Literally an oasis.

  • Last-minute dinner idea: McDonald's happy meals for all the kids.

Day 9 - Saturday, August 14th

  • Woke up and gave each kid a paper bag of goodies.

  • After saying our goodbyes, we drove south to Ensenada for lunch and souvenir shopping.  I had some more fish and shrimp tacos, as well as churros to satisfy my poor stomach.

  • Then it was time to start heading back to the States.

  • Had IHOP for dinner and will forever avoid it...

  • SAN (San Diego) -> IAH (Houston) -> YYZ (Toronto)

  • Home sweet home.
