Pastry: Place flour, sugar and salt in food processor and pulse a few times to combine. Add butter and toss quickly with hands to coat butter - BE CAREFUL - don't go near blades! Pulse 12-15 times or til butter is size of peas. With motor running, add 1/4 c ice water all at once through feed tube. Keep hitting pulse to combine but stop just before dough comes together. Turn onto floured surface and form into 2 discs. wrap with plastic and refrig one for at least an hour; can freeze other.
Rest: Preheat to 450. Roll pastry into 11" circle on floured surface and transfer to baking sheet with parchment (I used a stone). Peel, core and quarter apples. Cut each quarter in 3rds. Toss with orange zest. Cover dough with apple, leaving 1.5" border. Combine flour, sugar, salt, spices in processor. Add butter and pulse til crumbly. Pour into bowl and rub with fingers til holds together. Sprinkle on apples and gently fold border over apples, pleating to make a circle. Bake 20-25' til crust golden and apples tender.
