Spinach Frittata


9 eggs
1 cup milk
1/2 tsp each nutmeg and oregano
1/4 tsp each salt and pepper
1-3/4 cups shredded Cheddar or Monterey Jack cheese
1/4 lb cream cheese
2 tsp vegetable oil
1 onion chopped
1/2 cup diced sweet red pepper
4 cloves garlic, minced
1 pkg (10 oz/284 g) spinach, cooked, drained and chopped


1. In large bowl, whisk together eggs, milk, nutmeg, oregano, salt and pepper; stir in Cheddar and cream cheese.

2. In small skillet, heat oil over medium-high heat; cook onion, diced red pepper and garlic for 3 minutes or until softened. Stir into egg mixture along with spinach. (Recipe can be prepared to this point, covered and refrigerated overnight).

3. Pour into greased 8-inch (2L) square baking dish or 11 x 7 inch (2L) baking dish. Bake in 350 degree F oven for 40 to 50 minutes or until puffy, golden brown around the edges and set in the centre.

Makes 4 to 6 servings.
